Learn culinary skills working alongside a Red Seal Chef

The CulinaryWorks Certificate Program provides students with foundational and intermediate culinary knowledge and practical skills required for entry-level employment in professional kitchens. The program is structured to align with Red Seal Cook occupational competencies and industry standards. Emphasis is placed on food safety, kitchen operations, culinary math, foundational cooking techniques, garde manger, baking and pastry fundamentals, protein fabrication, and basic menu preparation.

CulinaryWorks builds on The Learning Exchange’s project-based learning and culinary courses, with the added focus of support to directly connect participants with employment opportunities.

The first cohort of Culinary Works graduated in May 2026. The Culinary Works program is part of our youth programming project, READY (Repairing Education and Employment Achievement Debts to Youth), a project funded in part by the Government of Canada’s Youth Employment and Skills Strategy.

Earn While You Learn

While participating in the CulinaryWorks program, learners build essential technical, professional and interpersonal skills through kitchen-based projects. Learners are paid honorariums for consistent participation and completing programming and their goals.
